Thai Beef Salad

Serves 4-6 l 20 minutes

Here’s a vibrant and nourishing Thai Beef Salad recipe that’s not only delicious but packed with health-boosting antioxidants and phyto-chemicals, perfect for supporting your body’s natural defences!

You will need:

  • 800g beef (works out to be approx. 40g protein for 4 servings)

  • 1 cucumber, thinly sliced

  • 1 red bell pepper, diced

  • 1 cup mixed fresh herbs (mint, coriander, and Thai basil)

  • 1 small red onion, thinly sliced

  • 1 cucumber, diced

  • 1 punnet cherry tomatoes

  • 2 cups fresh spinach or rocket

  • 1 small chilli, finely diced (optional)

  • 1/4 cup roasted peanuts (optional, for added texture and flavor)

Sauce

  • 4 tbsp fish sauce (or tamari for gluten-free)

  • 1/3 cup lime juice

  • 1 tbsp rice vinegar

  • 2 tsp honey or maple syrup

  • 1 clove garlic, minced

Season the beef with a pinch of salt and pepper. Heat a pan over medium-high heat, then cook the beef to your liking. Once cooked, allow the beef to rest for a few minutes, then slice it thinly.

In a large bowl, all salad ingredients together.

In a small bowl, whisk together the fish sauce, lime juice, rice vinegar, sweetener and minced garlic. Taste and adjust sweetness or saltiness as desired.

Add the sliced beef to the salad, then drizzle the dressing over the top. Toss gently to combine, and sprinkle with roasted peanuts for a little crunch, if desired.
